For Status History graphs, Help states that:

The “Status History Graph” widget gives you the ability to graph status changes over time and see the progression. This widget can display data from your site. Your Flow Production Tracking site collects data every time someone updates a status. Flow Production Tracking has been collecting status changes since the Flow Production Tracking 7.10 release, which means you will have access to historical data from Flow Production Tracking 7.10 and onward.

Is it possible to access this Status History via the API? For example, I want the history of when status has changed over time. Is Event Log the only way to gather that, or is there a better way to access status changes specifically?

Event Log it is.

Do note that you should check the site settings to see how long event log are kept online.
They usually get archived after 6 month to keep the database from bloating.
