Our production is using the Review App to give notes back on artist Versions.
Are note entries here stored as they are entered - in order to retrieve backup if the app crashes or due to another occurrence mid way through
Looking at the EventLogs page on the Project and User in question - and cannot see notes made earlier today

As text is entered into the review notes app, the entries are stored as drafts - a kind of note that’s not accessible in the UI (outside of the review notes app). You’ll see this in action when you move to the next note in the app: the notes entry will flash green, indicating that a draft has been saved.
Draft notes persist until published into actual notes, so if you lose internet connection through the review session any drafts taken up to that point should be saved.
