Hi Kevin!
You can manage field visibility on Bookings just like any other entity. First navigate to your Permissions page, twiddle open the permission group you want to edit > Field Permissions > Booking:
From there you can toggle on/off visibility and edit permissions for each field. Hope that does the trick for you!
