Is there a way to exclude f.e. “Published File” from activity postings in SG. For example, I create a single Version, which has multiple / many “Published Files”. The activity stream is instanly spammed with annoying messages, which no one wants to read

Not without customizing the SG source code. Adding Filters for Activity Stream pages is a longstanding feature request; it would be glorious.
The current “solution” is that you can now hide the native Activity Stream tab and replace it with a custom canvas page, but that loses all the other nice formatting of Activity Streams and does not live-update. 
Nevertheless, that’s we do now.
